Crab Cakes with Chipotle Sauce

Description:

Crab cakes rolled in toasted masa harina and served with a lively, rich chipotle pepper sauce. These cakes are great as appetizers and as a prelude to great seafood.

 
 

Ingredients:

Sauce:

  • 3/4 cup Mayonnaise
  • 1 tablespoon Fresh Lime Juice
  • 1 tablespoon chopped Roasted Peppers
  • 2 teaspoons minced canned Chipotle Chilies Cakes:
  • 1 cup Masa Harina (masa de maiz)
  • 12 ounces

Crabmeat

  • 6 tablespoons Mayonnaise
  • 1/2 cup finely chopped Red Bell Pepper
  • 3 tablespoons plus 1 teaspoon Fresh Lime Juice
  • 6 tablespoons chopped Fresh Cilantro
  • 2 teaspoons grated Lemon Peel
  • 2 tablespoons Olive Oil

 

 

 

Preparation:

  1. Preheat oven to 350°F.
  2. On baking sheet, spread masa harina into smooth layer.
  3. Bake harina about 10 minutes until light golden brown, stirring frequently. Remove harina from oven and allow to cool.
  4. In large mixing bowl, fold crabmeat, mayonnaise, bell pepper, lime juice, cilantro, and lemon peel together.
  5. Add ½ cup toasted masa harina.
  6. Form into 12 small crab cakes.
  7. Add remaining toasted masa harina to small mixing bowl. Roll crab cakes in masa harina to coat.
  8. In large saute pan, heat oil over medium heat until hot. Cook crab cakes 4 at a time until cakes are golden brown outside and heated through.
  9. Place cakes on serving dish and serve with sauce.
  10. To make sauce, mix mayonnaise, lime juice, roasted peppers, and chipotle chilies in serving bowl. Cover bowl with foil or plastic wrap and refrigerate until ready to serve.

Masa Harina

Masa harina is made from finely ground corn and used in making many mexican dishes, as well as being the main ingredient in making tamales and tortillas.

Chipotle Chilies

Often tan or coffee color, chipotle chilies are smoked jalapeno chilies. Chipotles can be found in supermarkets and specialty stores. Jalapenos can be smoked at home using a home smoker.

Roasted peppers are readily available. The roasted peppers are usually packed in jars and found with other canned and bottled vegetables. Peppers can be roasted at home in your oven. The process is relatively easy.
