Citrus Crusted Tuna with Garlic, Ginger & Lime

Ingredients:

  • 3 tb Finely chopped jalapeno
  • 2 tb Finely chopped ginger
  • 1 tb Chopped garlic
  • 3 tb Lime zest
  • 3 tb Lime juice
  • 1 tb Coarse Sea Salt
  • 1 tb Crushed black peppercorns
  • 2 tb Sugar
  • 1 c Dry white wine
  • 4 Tuna steaks; 1-1/2 inches
  • ; (6 oz.)
  • 2 tb Olive oil

 

 

Preparation:

  1. To prepare the crust: In a small saucepot combine the jalapeno, ginger, garlic, lime zest and juice, salt, peppercorns, sugar, and white wine.
  2. Simmer the mixture for 5 minutes on medium heat.
  3. Most of the liquid will be absorbed.
  4. Remove from the heat and cool.
  5. To prepare the tuna: Pack the crust mixture onto the tuna steaks.
  6. Let them absorb some of the flavors for 20 minutes at room temperature before cooking.
  7. Preheat a heavy pan very hot for 5 minutes.
  8. Drizzle the tuna with olive oil, then sear for only about 30 seconds on each side.
  9. Serve.
