Citrus Crusted Tuna with Garlic, Ginger & Lime

Ingredients:
3 tb Finely chopped
jalapeno
2 tb Finely chopped
ginger
1 tb Chopped
garlic
3 tb
Lime
zest
3 tb
Lime juice
1 tb Coarse Sea Salt
1 tb Crushed black
peppercorn

Sugar
1 c Dry
white wine
4
Tuna
steaks; 1-1/2 inches
; (6 oz.)
2 tb
Olive oil
Preparation:
To prepare the crust: In a small saucepot combine the jalapeno, ginger, garlic, lime zest and juice, salt, peppercorns, sugar, and white wine.
Simmer the mixture for 5 minutes on medium heat.
Most of the liquid will be absorbed.
Remove from the heat and cool.
To prepare the tuna: Pack the crust mixture onto the tuna steaks.
Let them absorb some of the flavors for 20 minutes at room temperature before cooking.
Preheat a heavy pan very hot for 5 minutes.
Drizzle the tuna with olive oil, then sear for only about 30 seconds on each side.
Serve.
